Gluten-Free, Vegan Pumpkin Muffins

Everyone loves muffins so we decide to present a special recipe of vegan pumpkin muffins. You can easily do that in your kitchen and enjoy your breakfast. Just bring together ingredients and start making gluten-free vegan pumpkin muffins by following instructions easily.

Makes 12 muffins



  • 2 cups gluten free, all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice1/2 tsp. salt
  • 1 teaspoon apple cider vinegar
  • 1 cup almond milk
  • 2 tbsp melted coconut oil
  • 1/2 cup cup maple syrup
  • 3/4 cup pumpkin puree
  • 1/2 cup raisins (optional)



1Pre-heat oven to 350 degrees lightly grease a muffin tin.

2Mix together the flour, baking powder, baking soda, pumpkin pie spice, and salt in a large mixing bowl.

3In a separate mixing bowl, whisk together the apple cider vinegar and almond milk till frothy. Mix in the oil, syrup, and pumpkin puree.

4Pour the wet ingredients into the dry ingredients and mix till they’re just combined —don’t overmix. Fold in the raisins.

5Spoon the batter into muffin tins and bake for about 20- 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
